Val & Carola’s Lemon Curd Ice Cream
Take a pot of lemon curd (lime or orange would work just as well)
Add one carton of creme frache and one carton of double cream.
mix
If by any ghastly chance you are using a ‘COMMERCIAL’ lemond curd bought from a supermarket instead of lovingly handmade by grannie - then take a lemon and grate the zest and add that to the mixture.
Freeze.
About every 30-40 mins remove from freezer and mix. Makes a very rich and very lemony ice cream.
Very easy and impressive at dinner parties.
I tend to go overboard and have several puddings of which the ice cream is just one option.

Even better if you rough crush meringue nests into the mixture before freezing!
