breakfast

I think I’m in a bit of rut with my breakfasts. I quite enjoy the quiet routine of them. Scrub (with my lovely Ikea brush) a couple of potatoes and then microwave them for a few minutes. Slice them. Mix them in a little olive oil and pepper and put them into my blue (dishwasherable) oven-proof dish along with a mushroom, a tomato and couple of sausages. Bake it all in the oven for 35 minutes. Sit with a pot of coffee while it all cooks.
This morning though I wondered if it might be nice to have something different. Pancakes? Waffles? I’m not sure. I do find I do well on a pretty substantial first meal of the day. Something that releases energy slowly. I’m not sure that pancakes or waffles would quite fit the bill. I used to do something nice with grated potatoes and onions made into little flat pancakey shapes and fried. Perhaps I’ll try them tomorrow. Now, the question is can I replace the sausages with something else?

I usually make scrambled eggs or porridge as they are both quick. The potatoe/tomato/sausage combo sounds nice though.
