Love the image! If only I could make the right choices. Thing is glucose is a quick fix for fatigue and disguises one’s real levels of energy. Well that’s what I think. And it means you get dependent on it for an energy which gives a false reading. But it is sooooo addictive. Why aren’t apples addictive?

Ok then here’s my recipe for healthy banana loaf which I made this morning.
Find 3 fairtrade bananas in a supermarket bag on the floor - retrieve.
In a bowl put in centimetre of butter and about 2 tablespoons of (fairtrade sugar). Microwave so butter melts mix. Chop bananas the squishier the better mix into sugar/butter mix. Take a packet of brazil nuts. Put one third of packet in, then chop in half another third, last third chop more finely. Add a capful of vanilla essence, 2 eggs and a teaspoon of baking powder. Put in a loaf tin. Oven about gas mark 5. Takes about 20 mins. Just right when browned on top and knife is clean when removed from loaf.
I think the addition of brazil nuts full of protein makes the cake less wildly destabilizing to sugar levels most of which come from the fruit.

No flour of any sort? I was wondering about making something with ground almonds instead of wheat flour. Not for a couple of weeks though I’m going to be strict with myself for a while before I let the treats return.

Sorry yes just add enough flour so it looks like a fairly thick batter. I’ve been emailing my friend Helena who is off wheat and she’s planning to try it with ground almonds once she’s made it I’ll report back on her experiences.
